Pancakes for Two

Ingredients
  

  • 1 cup flour
  • 3 tsp baking powder
  • 2 Tbsp sugar
  • 2 Tbsp cinnamon
  • 1 egg
  • 3 Tbsp olive oil extra virgin
  • milk

Method
 

  1. Sift together the flour, baking powder, sugar and cinnamon.
  2. In a 1 cup liquid measuring cup, add the egg and oil, then add milk to bring up to the 1 cup mark. Beat lightly and add to the flour mixture.
  3. Stir just enough to incorporate ingredients, but do not over stir as the pancakes will get tougher with over stirring.
  4. Fry on a hot griddle, flipping them when edges start to appear dry.
  5. You can used add-ins of apples, berries, chocolate chips, etc - up to about 1/2 cup.
